Is there a way to add items to a choice list at runtime? It's useful to predefine some items, but sometimes I'd like the user to be able to type their own value in, and have that persisted in the choice list to improve consistency.

The default AutoCompleteBox does not support this scenario.  It is possible for a 3rd party to produce a LS control to do that, or you may try to create one.
