As a consequence, I see no analysis services database/cubes/etc. created (I am assuming there are cubes and such to create). I do not have SQL Server 2005 (9.0.xxx.x) installed. In reading some posts on the internet, there are mentions of DTS, too. This leads me to believe this site is not compatible with Commerce Server 2007 using SQL Server 2008 as a database platform. Am I correct in this assumption? Or, am I missing something? Is there a substitute test/sample site.

Commerce server data warehousing works on DTS only. Hope you are running commerce server SP2 with SQL Server 2008 32 bit. As per Microsoft, SQL 2008 supports DTS with some limitations. Check below link for more details.
