You should reach out to Intel with questions regarding their chipsets but I happen to know the Curie and Quark do not support IoT Core.  I do not know what a Zephyr equivalent will be but you should reach out to the chip manufacturer or Board OEM with your questions on which of their chipsets support IoT Core.
