You can request the MIME content of a message and then save this as an EML file see http://social.technet.microsoft.com/Forums/en-US/exchangesvrdevelopment/thread/7fcbf205-c5b2-4987-98fe-c2a5ef2f2201. But if you want Compound Message Format (msg files) then then you need to look at using MAPI see http://support.microsoft.com/kb/171907/en-us. It would be a great feature if EWS supported doing this.
