I am looking to get an output from Platform Builder for configuration management purposes, so that when I archive my Windows CE 6.0 OS images, others will know what components are included in each image.

Ceconfig.h is included in the OS image as well as the _FLATRELEASEDIR.  It may be more information that you really want thought.
