I am trying to use the HDFace. I want to catch the color skin of the user using the face model. The thing is the face data collection can never be entirely built.  I have seen in one sample that they use the CollectFaceDataAsync function of the FaceModelBuilder class.  I am using c#. This function is not available in my code. I supposed it should be according to the online reference of this class. Is there something I need to do to use it ? Or do I simply have to wait a later update ?

Have a look at the HDFace Basics sample in the SDK. The code under the StartCapture function demonstrates how to capture the face for the user. You will want to look at the Jumpstart video for more background on why this is needed:
