If I were to want to un-install the existing version of Crystal Reports, (whatever version that is...), where would I do this un-install from? When I looked at the Control Panel in Add/Remove programs, Crystal Reports doesn't show up seperately from VS 2005.

VS 2005 comes with Crystal Reports 10.2. Its a special version, not quite the full version, but close.

If you are wanting to uninstall it, you do it through the Visual Studio 2005 installer. If you decide you want to upgrade to the full version, you will need to get Crystal Reports XIr2 developer edition.
