Just a couple of simple ideas:

The interviewers, like normal people, would hate to be bored. They want to listen to something interesting. But your won''t be able to tell anything interesting about the project if you see nothing interesting by yourself. It''s hard to believe you do see something interesting if you don''t know what to tell about it.

Perhaps I would say: if you don''t find your projects your was busy with for two years interesting (may be this is one of the reasons you want to go for another job), may be, do some small but interesting project for yourself. Then you would be able to say: "well, it was… a project like a project, but… my recent project I''ve done for myself!.." :-)

I personally would highly respect a person who does some interesting development for himself…
