I am having a bit of difficulty.

In this video presentation, http://videos.visitmix.com/MIX09/C01F , schormann refers to a "dragdropitem behavior" (and that appears to be what he is actually accessing, though I can't be sure since the screen is a bit blurry).

However, in Blend 3, I can only find a "MouseDragElementBehavior". It does not appear to work in the same manner, as it will not apply to the items, either by dragging onto the listbox, as stated, or adding it to the item template. Should I be adding this behavior manually?

The Behaviors system is extensible. While the Behavior that you want (dragging and dropping between lists of items) does not exist outside the box, one of the samples (I think its the SnowboardSketch - WPF one) that has a DragDropCopyItemBehavior that you can learn from.
