Hi 

What do you mean by "none of the files show up my views because most of the columns appear to be empty"? Does the "files" here means forms type file stored in Form template library? Did you create some custom views?
When saying "Opening and closing the form will update the file, and my views will see it again", do you mean edit list form by "form" here?
Please provide more information and screenshots with explanation so that we can better understand and help you solve your issue.
