We don't' actively resolve IP address.  This is a feature we may implement moving forward with Message Analyzer (http://blogs.TechNet.com/MessageAnalyzer).  We do use captured traffic to resolve DNS names, but that means you need to try and resolve the name during the capture.

As for the unknown processes, you could try running Network Monitor as administrator.  There are cases where the process can't be obtained because it is running under another account.
