This is getting really frustrating. I'm on the verge of dumping these tools for greener pastures because of old documentation and constant exceptions being thrown.
90% of the time I complete a recording and click Generate Code Coded UI Test Builder throws an unhandled exception. Out of those times about 10% don't even make it to "Generate Code" before throwing the exception. I'm using Visual Studio Enterprise 2017 with the very latest build (as of posting date) on a Windows 10 Enterprise system build 1607.
Event Viewer for the Application is particularly useless with many unknowns:

Sorry about your suffering.
Be honest, while trying to reproduce your issue by using VS2017 in my end, I got an issue which is after clicking Generate button the test builder was just hanging there, and I waited it for more than an hour, the result is to close it through Task Manager, which is really unexpected, as I always use VS 2015 Enterprise for Coded UI testing.
But later, after restarting the Visual Studio, it works well this time, I really cannot tell what part caused that issue. But I makes think, which I have to say honestly, maybe VS2017 is not that stable to run coded ui test, that's why I still insist using VS2015 as my main tool.
In your case, I suggest you close the VS2017 IDE then restart it, and tried to record some test again, to see if it could work.
And please also make sure that the Ram memory in your machine has much enough space while you are recording.
If above don't work either, and the VS in your side keep having this kind of issues, you may repair it. (via Visual Studio Installer)
At last, before you dump the product vs 2017, please give a chance to VS 2015 Enterprise, just in case.
