Im wondering why when I view captures, I notice that the destination and sourceses change.

why is it when the source and destinations start out with "lets say" (ServerName) and then changes to (ServerName.DomainName)

When we resolve names from the trace, we update a table in memory.  This table is used to populated the friendly names in the source/destitination columns.  So if an ipaddress gets some updates from DNS or WINS, we will update our table, which will change the display for all IP addresses.

If the server name has a <0> after it, it because the NetBIOS name has be resolved and the <0> indicates that the type of the name is a ComputerName (as opposed to a UserName or DomainNmae)  There's a list and further explaination at http://technet.microsoft.com/en-us/library/cc728457(v=ws.10).aspx.  But basically we add the <0> to make it easier to understand why type of name it is in the display.
