I wanted to know if it's possible to build an automated process/ workflow into SharePoint for onboarding new employees?

There is one onboarding process, but there are multiple projects and practices, within my company.

From you description, you want to create a workflow that when you enter an email for a user, it will send requests to the appropriate site admins to grant them permissions.

I need to confirm some information to helping your solving your issue. Do you want to enter the email in the column in a list/library? Do you want to manually add the tag for them?
