I am trying to migrate a WINS server from an old to new infrastructure in the process I have built and started replicating with the old server. Have configured clients to only use the new one.

I want to run NM on the old box to capture any requests still coming to it and then go after those clients that haven't been configured and finish things off.

I have no clue what kind of filter I need to setup to capture requests coming to this (Old WINS) server, would anyone be able to help me out.

You can filter for UDP 137 for registrations to the WINS server and TCP 135 for NBNS name resolution requests from client machines. For spotting clients that are configured to be clients to the WINS Server check the TCP 135 specifically where the server is the old server and connecting client is the machine that you need to re-configure.
