Long story short, I'm trying to figure out a way to automatically populate/prefill a rich text field with a little table template (it will always be the same table template) on a custom list form. I feel like this should be fairly simple, but I can't find any way to do this ootb. Does anyone have any suggestions of how I could do this using script editor or another process?

Your first problem is that OOB has no provision for setting a default value of any kind for a multiline (rich text) column. This may be helpful to get you past the first hurdle.
