No matter what I do I cannot seem to find how to edit or add a content type to a document set. Does anyone know how? I can't seem to find it. Also I am using a content type hub. Not sure if this helps but when I look at the library of content types it seems available but no matter when I do it just will not show up to add. It's extremely frustrating because something this common should be a LOT more straightforward.

Do you mean you cannot select the custom content type to create a new document in a document set in SharePoint library?

If that’s the case, go to library settings->click 'Document Set' content type under Content Types section->click 'Document set settings' under Settings section->select the relevant custom content type in the Allowed Content Types section.
