- For an advanced, one-minute-based monitoring experience, select the check box for AllMetrics.

Hello,
All Metrics is not supported on Managed Instance. Only query statistics and query insights are available, if you are using Managed Instance.
With Standard experience you can select only to log telemetry on the topics you are interested (query statistics, blocking, query waits).
They suggest you should go with All Metrics only for a limited period of time because of the great amount of information logged
