In one instance of APIM, I'm unable to save some settings from the application Insights.
Example, I check "Frontend Request", hit save, then in the right corner a message says it was successfully saved, But when i get back to the settings the option in unchecked. In application insights I can't see the requests, so this proves the setting was not saved.
Anyway to workaround it for AI?

You get that experience if you leave the "Sampling (%)" and "First bytes of Body (max 1024)" to default 0. Please set these to 100% and 1024 respectively and you should start seeing the requests getting logged in application insights. Please refer following image or this documentation. Hope that helps.
