We have 2 Windows Servers with SQL Server Enterprise installed.

When deploying these servers, a default image was used and not a "byol" image. As these servers are only used for development, I will like to update the SQL Server Licencing on these servers, so we don’t get charged for SQL Enterprise, and utilise our development agreement licencing.

So far, the only option I can find is to re-build these dev servers.

Can you please let me know if there is a way where I can keep the existing servers, and update the licencing?

Unfortunately no. You cannot change from the Pay-As-You-Go license to a BYOL model once deployed. You have to rebuild the VMs using the BYOL image and migrate the data base.
