We've deployed SharePoint 2016. I've added an email address to some lists, which is very straight forward process.  But now I want to remove the address from one list.  Essentially make it not email enabled.  For the "Allow this document library to receive e-mail" option I click the No radio button and then Ok.  This results in the "Sorry, something went wrong" screen.

I suspect a permissions issue with the Active Directory OU that where the Contacts are created.  But I've reviewed the process for setting permissions several times.  I seem to have it right, and the Contacts object gets created in AD just fine.

I am not very understanding of you. 

Per my knowledge, "Allow this document library to receive e-mail" option is used to set incoming email,  incoming email is only available in some template of list.

What is the template of your list? 

Are you add email address as an column in the list? Why not just delete the email address column from the list?

Navigate to list settings->click the email address column->delete it.
