I have been trying to move all the files from one of my libraries to a local server. I did this with 2 of them using the library tab and open in explorer, which opened it in a windows explorer window which I then just copied over. But I did this in classic view I cant view two of my libraries unless I switch to the new view because they are over 5000, but when I switch over to the new view I loose the library ribbon tab and cant figure out how to open them in an explorer window to move them like the previous ones. Any help?

You can change that to classic view again by going to library settings --> advance settings and change the list experience to "Classic Experience", please check below picture for reference.

Classic view supports 5000 items in a view, you can create multiple views by filtering them on ID. like filter ID between 0 to 5000.

Create mulitiple views as many you require to view the documents in classic view, but you might not open that in file explorer and copying them will be difficult. And for that you can use 3rd party tools like ShareGate or Metalogix for content migration. both provide one month tiral which will be good enough to move your documents.
