We have set of applications developed in .Net Framework 2.0 (both Windows and Web Applications) running in Windows 2003 Server. Now management decided to upgrade it to Windows 2008 Server. Some good things are AppFabric (not a part of window but is available free and now out of beta phase) , Ribbon based UI''s ideal for making dashboards and plenty more. But I don''t think you will need any change besides deciding 64 bit or 32 bit compilation if applicable.
