The way you tried, by passing an array to the via parameter, should be the proper way to pass multiple waypoints, however it appears not supported yet. Routing v8 is a recent API, I had the same issue.

In the meantime I would advise to call the Routing v8 REST API directly, and build a polyline out of the response.
