find -name '*.hpp' -not -path '*/folder2/*'

To exclude several directories, either repeat the condition:

find -name '*.hpp' -not -path '*/folder2/*' -not -path '*/folder3/*'

Or use alternative in a regex:

find -name '*.hpp' -not -regex '.*/\(folder2\|folder3\)/.*'
