If I want to pause particular Campaigns/KWs at a future date, does Bing allow me to schedule those changes?

This wouldn't be ad scheduling, but if I want to pause one keyword in two weeks, is there a way to schedule that pause to happen automatically, or would I have to do it myself?

Yes you would have to do it yourself, as the feature you described is not available. You can set the start and end date for an entire ad group, but not for a specific keyword.
