An EDI file is nothing more than an text flat file. There are multiple standards X12, EDIFACT, etc. if you have the documentation you have all you need to work with. Each file is made of segments and you populate those segments based on the type of document, such as a 850 PO or an 855 PO Acknowledgement, and the version, 4010, 4020, etc.

But just remember it is nothing but a text file.
