Is there any way to ensure that you are the only one working on a document? So you don't overwrite changes. Example: Invoices our purchase orders. You can not have 2 people working on a existing document at the same time.

Yes, concurrency control is built into the service, even more so when you use Stored Procedures, Triggers, and UDFs.
