whereas there is one page listing out best practices saying that we should use pod identity.

Now, I am a bit confused by these two statements.

should I use pod identity in my production environment or not.

aad-pod-identity is in preview.  When it graduates to public preview or GA, Official documentation will be added in https://docs.microsoft.com/en-us/azure/aks/.

Till that time its not recommended for production use. I will check with the team once.

Till that time you can try out in testing environments. If you face any issues you can post here or on that GitHub repositories issues.
