I'm now totally confused. :(

I had almost sold our organization on using AI given the pricing shown to me in the Portal for the one we've been using. That is getting 1GB of data a month free per application and then 3.16 AUD per GB after that.

Pricing of Azure Application Insights is based on data volume ingested. Each Application Insights resource is charged as a separate service and contributes to the bill for your Azure Subscription. In your case if you want to add more apps to same Application Insights Instance the billing is based on the data being Ingested into that particular Application Insights Instance. We have Limits around number of metrics and events per application (that is, per instrumentation key) . Below are few additional documentation reference which will help you better understand the usage and cost associated.
