Now that our testing is complete I'm looking to clear some of the 'humerous' activities that were entered but can't find a way to do this.

There is no way to do that using the Lync API.  Maybe a future version of the API will give you access to a collection of your published personal notes.  Anyone on the Lync feature team listening in here?
