We're in process of setting up an Azure Stack and I've read conflicting information about the upgrade process.

Microsoft update process runs a 'drain' node (relocate VMs/services to different node), takes node offline, updates, restarts, resume function...this cycles through all nodes in stack. OEM Vendor P&U process can vary from providing guides with ordered/specified steps, and links to individual patches and updates, to an automated process that handles all the individual patching and updates in a single workflow/process. (Full disclosure, I work for Dell EMC)
