I have a Port Monitor that, for the most part, works quite happily with V3 printers on Windows 8.1 and Windows 10 Preview.

MY port monitor redirects print output from an application to a suitably named file in one of a selection of folders that are monitored by a Workflow system my company develops. I provide a UI page on the printer dialog to customize the final target folder, and in a future release, to customize some of the settings to apply to the job as it passes through my workflow. Is currently uses the V3 PScript driver and does NOT display a specify destination file dialog.

As of today, the only alternative implementations we can recommend for a solution like yours are:
