Seems a bit like the "how long is a piece of string" question but I will have a go.

There is nothing incorrect about running Commerce Servers on a Virtual Server, you would not be irresponsible or risky if you did this.

However you have to go through the same performance analysis you would go through for normal hardware

Some of the things you may want to consider are:
32 or 64 bit?
Memory
Hits per second
Checkout per second and other pipelines. This is the real limiting factor!
Schedules (are your sites all busy at the same time?)
Network cards
Number of processsors.
Licensing. (Could be savings here).

Personally I am more inclined to use virtual servers for the staging and development environments and hardware for the production, but your post helped me realize that I might be getting old-fashioned about this.
