I understand I can create an exception (or "hole" as it was referred to me) in the overlay for protection on a volume.

My question is whether the hole at "C:\Program Files\OurApp" is for that folder, all sub-files and all sub-folders recursively or do I need to create exclusions for every sub-file and folder?

If the latter, WES isn't going to work for us because the customer has to dynamically change data and folders within our main application folder.

When you add a folder to the exclusion list - all the sub-folders and sub-files are included as well. It does not matter if the folder contents change dynamically.
