I am using MS Project Professional 2010. I am adding a new column, Text1 and save it as xml.

The XML export will save data and not the view. If you're simply adding a column (text 1), you're just modifying the view. You'll see that if you're entering a value for text 1 for any task and doing the export/import, you'll find back your value.
