A general query with VSTS

In order to track and review our estimation processes - I was assuming a simple way to analyse this would be to look at times taken to complete tasks (e.g. time spent, time remaining fields for tasks) measured against the original estimate field.

However, there is nothing in VSTS to prevent users from being able to change the original estimate apart from:

- removing the field from tasks, or hiding the field on the form: VSTS does not support changing the state of a field from what I can see.

- I thought that trying to search the audit history, say searching by something like "...changed Original Estimate.." would work - but I believe that numerical fields are not supported with search history?

Is there a better way to measure this - or is there some other setup/config I am missing?
