A video tutorial I watched shows that there is a button under the gradient properties to define a new brush but I don't have it.

The [+ Brush] button is really just a Convert Brush to Resource Button.  While the styling and placement have changed, the option is still available.  Under the sets of brushes, you'll see options like "Fill," "Stroke," or "Opacity Mask."  There are sample color blocks to the right of the headings, and *just* to the right of the color samples there are small squares.  If you mouse over the squares, you'll see they provide Advanced Options.  Click the square and click "Convert to New Resource."  This will give you the equivalent functionality of the previous [+ Brush] button.
