I have a document library, "User Agreement", with a content type.   New items are created in my document library by a list workflow that runs on a "Request" list. Originally, I tried to copy and modify the OOB Collect Signature workflow to run on create but haven't found a way to associate it to that content type nor figure out how to change the parameters: Signer to a field, Requestor.  

I did read that since I'm using this only on this list it's best to just go with a list workflow.   So I used the "Assign a To-Do Item" Task action and it ran successfully and sent a Task Notification email to the Requestor but I can't figure out where to modify the wording on the Task Notification Email.   The "Assign a To-Do Item" doesn't seem to have a Task Process Editor like the OOB Approval or "Big three" workflows. 

I'm new to working with these other Designer actions.

The OOB Workflows are hardcoded, and short of modifying them at the template level (probably Visual Studio), you probably can't do much with them.

Same goes for an OOB Action. It's preprogramed to do it's thing, and if it doesn't present options, then you'll have to figure out how to roll your own.

Worst case scenario might be to let the default email fire, but then follow it up with a 2nd, more informative, email.
