Will updating Professional to the same service pack solve this problem?

I had the problem of Tasks being grayed out in the Timesheets so users couldn't enter hours against them, I was given that the solution would be to update Professional to the same sp.

The fact that a SP missmatch was identified could cause issues. The Server and Client sides need to be on the same SP/CU level. You need to be a bit more specific on what errors you resources are getting when creating timesheets. HAve you perused the ULS logs ?

Assignments are lost ? Do you mean in the Schedule the resources are no longer assigned to tasks ? Please eloborate.
