We currently have ADFS 2.0 RTW set up and functioning well.  What I'd like to know is if there are any restrictions to adding another ADFS instance to the same domain (we'd like to have a test instance to test our code, etc before it goes to the prod instance).

Generally speaking no, there are no problems.  Actually, to a degree Microsoft recommends it.  But that assumes they have different hostnames et al.  If you are trying to build out a farm then you need to be careful as it requires special configuration.
