For a true sub-domain you'd need to get you host to set this up for you. It's not something you do in EW.

eg: if you main domain is www.websamples.com a sub-domain might be www.examples.websamples.com

You can create a sub-directory in EW, for example:

www.websamples.com/examples and to make this work you simply put a 'home page' (index.htm, default.aspx etc) in this folder.

If you want EW to maintain this separately you can right-click the folder and 'convert to web'. This means that it is treated as a separate entity by EW for publishing, as a sub-web'.
