We are running sharepoint 2013 on windows server 2012 r2.  Is there a way to remove the ability to view and access authored documents when one hovers over a person's profile in the employee directory?

Hi efg20,

The search results are security trimmed, if the documents are secured they will not appear to users who do not have access. You can also remove the authored documents section by finding the section of the ItemPerson_HoverPanel and remove the code that performs that function.
