I want to change the SQL server instance to new SQL server instance so that all my future content databases creation must go to that new db server. What are the exact steps to do that?

I am going to Central Admin > Application Management > Databases and select Specify the default database server > Change the name with the new db server name and hit ok. yes, if you aren't using a SQL Alias that will change the default that is used when creating content databases in the future.  If you are using SQL Aliases (and you should be) then create a new SQL alias that points to the new db server and then change the default database server value to point to the new SQL alias.
