I have accessed some my-sites for our users, and i find that each site have a section named "Contact Information" as follow:-

so i have these questions regarding the above:-

1) can we sync all these info or part of these info from active directory ?

For your first question, you can sync all these information from Active Directory. To sync information from Active Directory to SharePoint, you need to go to Central Administration > User Profile Service Application to configure sync connection from AD to the User Profile and go to "Configure Sync Settings" to select "Use SharePoint Active Directory Import". Then you need to go to the "Manage User Properties" and choose to edit one property to create mapping of property between AD and SharePoint. For example, there is a property called "Home phone" in SharePoint, however it is called "homePhone" in AD, as a result, you need to create a import mapping between "Home phone" and "homePhone", then when you edit "homePhone" in AD and start sync in SharePoint, the information will auto sync to SharePoint.

For your second question, there are three methods to sync in SharePoint.

When you use "SharePoint Profile Sync" and have created import mapping between properties, the data entered by the users will get overridden with the data of Active Directory after the user manage to populate these information in AD. If you create export mapping between properties, the data in SharePoint will not be overridden, and the data in Active Directory will be overridden with the data of the SharePoint.
