I have a multi-tenant SaaS platform that basically uses sub domains to differentiate the tenants (i.e. customer1.domain.com, customer2.domain.com, customerX.domain.com, etc...). I need to be able to route based on the sub domain to a specific server / VM. I saw the multi-site routing capabilities as well as path based routing, but 1) I am not too sure if this is the right place and 2) if this is possible at all as I found a few threads that request such functionality. I almost need a routing table where I map a sub-domain to an IP address / VM.

This is possible with App Gateways. You can map different inputs to a specific set of VMs / IP Addresses. You will need to make the DNS point to the proper input for the App Gateway, then configure the listener & routing rules to send traffic to the proper backend pools.
