I would like to remove the option for contributors to edit an excel document in the client app for an excel file stored in sharepoint 365. I only want edit in browser to be the option, except for the administrator of the file who should still be able to do maintenance to the excel file in client app. Is this possible?

You can deactivate the "open documents in client application by default" feature from site collection features.
