My company is subjected to several inspections by regulatory authorities each year.  During an inspection, the inspectors will make requests to see documents and personnel.  The ‘Hosts’ log each request (e.g. "Show me all maintenance documents for XXX equipment for the last 12 months") in an Excel On-line sheet (hosted in a SharePoint site).

Over the course of an inspection - say, 5 days - the inspectors may make several hundred requests, sometimes at a frequency of dozens per hour.

Multiple users (up to 10+) must access the sheet simultaneously and must always see live information.  The same users are also accessing other Excel on-line sheets, via a SharePoint link, as part of the Back Room management process.

I have tried using a SharePoint list but the refresh frequency causes a problem in that, adding or editing a list item does not automatically show up on other users’ PCs – they either have to manually refresh or setting an automatic refresh of say, 30 seconds, causes a problem for users who are using the ‘quick edit’ function – the automatic refresh causes them to lose any in-progress edits they are working on.

For SharePoint, there is no OOB way to prevent multiple users from editing the same field simultaneously, you just can prevent multiple users from editing a same document at the same time via "Required Check Out" feature.
