We are currently looking to creating a link between our help desk and SharePoint environments. The current proposal is for all calls that require development tasks to be pushed into a SharePoint list for the development team to utilise. The link will happen through an automated email where the ticket will start in our helpdesk system and will sent an email out when the status of the ticket changes to "Development" (We have this set up already) We need to the email to be sent to the SharePoint list and which will then digest the information inside the email (IE Ticket number, description,  Raised by)

Assuming that your SharePoint environment is on-premises, what you want is to configure incoming email.  Configuring incoming email will let you send emails to a SharePoint document library.  Then you will need to create an SPEmailEventReciever to process each mail message as it arrives and process the information to add it as metadata to the mail message or to a new list item in a different list.  Here's an article discussing a similar requirement.
