we are planning to sync two different AD forests to O365 with one Azure AD Connect Server.

I doubt that Azure AD connect will allow to connect multiple forest with same domain name. When you add the second forest then connect might find the DNS conflict and will throw the error. However it is not recommended to have same domain name while connecting multiple forest to single Azure AD.
